Whenever I eat or cook, my rule of thumb is spicy. I love to add chipotle or chili pepper to any dish.

Just looking at the photos and the recipe description made me excited about this dish plus it gave me an excuse to buy Jalapeño Kettle Chips :)
This recipe includes directions to make your jalapeno dipping sauce. I skipped that part and just used a jalapeño ranch dressing that I found at Trader Joe’s. Another change I made was to marinate the chicken in soy sauce & boxed wine (not going to waste the good stuff!)
The basic set-up is as follows: soak the chicken in a buttermilk/cayenne pepper mixture and then cover the chicken in crushed up Jalapeño Kettle Chips.
I baked my chicken for 30 minutes and that was perfect. I also served this with cous cous and steamed broccoli. The broccoli had a Dijon mustard and red pepper dressing that also gave an added kick to the meal :)
Final thoughts? Well like most fake-baked recipes, the chips fell off the moment I cut into the chicken. I don’t really mind that because I just scoop them up and eat them with the chicken. But if that’s a deal breaker for you, you have been warned ;)
Overall grade: definitely make again but I would find a spicy marinade to kick this up another notch :D
